I would check some websites like

http://www.eventlister.com

http://www.festivalnet.com

Both have comments and will give you information on attendance, booth fees, number of vendors, years in existence, and websites for the promoters.

I'd also ask other crafters. We do about 40 events a year in our area, and word of mouth is often the best way to find the good shows.

Also, most shows are already full for this year. Begin planning for next year. I would also look at events like outdoor living shows, camping shows, etc. Also you might want to approach companies like Cabella's or Pro Bass Shops to see if they will let you sell in their shows.

I would also see if you can get a wildlife magazine or a large newspaper to run an article on you and your carving. Publicity is the best way to get business.
